notes: add medium or mild Italian sausage to reduce the spice. cook 3/4 of a pound of pasta for larger portion.

Directions

  1. in a medium pot bring salted water to a boil.
  2. in a heated skillet add a small amount of olive oil & heat, add sausage, breaking it into small pieces until cooked through.
  3. add diced onion & cook until soft.
  4. cook pasta.
  5. add 16 oz of the Sunday Sauce company spicy 89, parmesan rind (optional) & simmer for 5-10 mins.
  6. add heavy cream & simmer an additional 5-10 mins.
  7. add spinach until wilted.
  8. drain pasta and add to the sauce.
  9. once incorporated, plate and top with a dollop of ricotta cheese, basil and parmesan.
