profile: spicy, creamy, hearty.
notes: add medium or mild Italian sausage to reduce the spice. cook 3/4 of a pound of pasta for larger portion.
uses: one pot meal for quick weeknight dinner.
Directions
- in a medium pot bring salted water to a boil.
- in a heated skillet add a small amount of olive oil & heat, add sausage, breaking it into small pieces until cooked through.
- add diced onion & cook until soft.
- cook pasta.
- add 16 oz of the Sunday Sauce company spicy 89, parmesan rind (optional) & simmer for 5-10 mins.
- add heavy cream & simmer an additional 5-10 mins.
- add spinach until wilted.
- drain pasta and add to the sauce.
- once incorporated, plate and top with a dollop of ricotta cheese, basil and parmesan.
