notes: can add extra crushed tomatoes & eggs make extra spicy with chili flakes or Calabrian peppers. use whatever bread you have in the house, simply rub it on both sides with a clove of cut garlic and add to a pan with butter. brown on both sides.

uses: breakfast, brunch

Directions

  1. preheat oven to 400 degrees.
  2. in a small saucepan over medium heat, add 2 tsps of olive oil. once the oil is hot, add chopped onion & sauté until soft & just starting to brown.
  3. add original 76 Sunday Sauce, oregano & chili flakes to the sautéed onion & heat through for 2-5 mins. stir regularly.
  4. add the sauce mixture to small oven safe dish(s) depending on if you're scaling the recipe.
  5. making small "holes" or space in the sauce, crack & add eggs carefully. gently scoop a small amount of sauce over the egg whites to help them cook evenly.
  6. bake on 400 degrees on center rack in oven for 10 mins.
  7. remove & sprinkle with parsley.
  8. serve with crusty garlic/butter bread for dipping.
