Directions
- trim any fat from the roast.
- generously salt & pepper all sides of the roast & sear on high heat for 2-3 mins on each side (sides too).
- add all other ingredients to a crock pot.
- add meat & cook for 8 hours.
- monitor roast throughout cooking & skim any fat from the top.
- shred beef and add back to the crockpot. cook for an additional 30 mins.
- serve.
