PROFILE: hearty & rich with a deep, savory beef flavor.

USES: serve over creamy polenta or pasta. for a gluten-free option serve over chickpeas.

Directions

  1. trim any fat from the roast.
  2. generously salt & pepper all sides of the roast & sear on high heat for 2-3 mins on each side (sides too).
  3. add all other ingredients to a crock pot.
  4. add meat & cook for 8 hours.
  5. monitor roast throughout cooking & skim any fat from the top.
  6. shred beef and add back to the crockpot. cook for an additional 30 mins.
  7. serve.
